Most recipes call for applying either a dry rub (a combination of seasonings such as garlic powder, onion powder, cumin, etc.)or an apple juice-based marinade onto the brisket before placing it in the smoker over low indirect heat — around 250 degrees Fahrenheit — until its internal temperature hits 195 degrees F (about 4 - 6 hrs). You must wrap your brisket portion after 4-5 hrs into aluminum foil before continuing its slow cooking process as this helps keep all its juices intact during cooking. Also do not forget about adding wood chips every 1-2 hours for added smoky flavor!
